We all know very well that even on Earth if we pour water on the sand exposed to the Sun this evaporates more or less quickly depending on the environmental temperature. The same thing happens on Mars, the only variation is that if the pressure is lower than the triple point (6.11 hPa) this boils as well as evaporate. But the boiling itself does not accelerate the evaporation process, as much as a pot of boiling water does not evaporate instantly.
Be careful not to be fooled by the usual popularizers that want you to believe that water on Mars can not exist in liquid state.
